Chalk, cold, and the art of the blend
Climate
Champagne sits at the northern edge of what ripens reliably, roughly 145 km east of Paris at 49 degrees north. The climate is cool continental with an oceanic softening from the west, which gives it two habits: hard spring frosts that can take a third of the crop in a night, and autumns wet enough to bring botrytis into thin-skinned Meunier.
That marginality is the point. Grapes here reach ripeness with acidity still high and sugars modest, which is exactly what a base wine for second fermentation wants. Warming has been unambiguous over the last three decades. Harvest dates have moved forward by around two weeks since the 1980s, potential alcohols have risen, and chaptalisation is now the exception rather than the rule.
Soils
The Marne heartland sits on a deep bed of Belemnite chalk, a soft porous limestone formed from Cretaceous marine sediment. It holds water like a sponge in drought and drains it away in flood, and it reflects light back into the canopy on a slope that faces the wrong way for warmth. The Gallo-Roman chalk pits beneath Reims, the crayères, are the same rock quarried out and now used as cellars at a constant ten degrees.

The Côte des Bar, 100 km south-east and closer to Chablis than to Reims, breaks the pattern entirely. Its Kimmeridgian marl is a clay-limestone that gives Pinot Noir more flesh and less tension. For eighty years that difference was a political problem rather than a stylistic one.
Grapes
Three varieties do almost all the work, and each contributes something the others cannot. Chardonnay brings acidity, citrus and the capacity to age for decades. Pinot Noir brings structure, red fruit and weight on the mid-palate. Meunier ripens earlier and buds later, which makes it the insurance policy in frost-prone sites, and it gives a softer, rounder wine that drinks well young.
Four historic varieties survive in fragments: Arbane, Petit Meslier, Pinot Blanc and Pinot Gris, together well under one per cent of plantings. A handful of growers bottle them, and the CIVC approved the disease-resistant hybrid Voltis for trial plantings in 2021.
Styles
Almost everything is non-vintage, blended across years to hold a house style steady. Vintage wines are made only when a harvest is judged good enough to stand alone, and must spend at least three years on lees. Blanc de blancs is Chardonnay only, blanc de noirs is the black grapes only, and rosé is made either by blending in still red wine or, less commonly, by bleeding off juice after brief skin contact.
The English drank it dry before the French did. Brut was an export style before it was a Champagne style.
History
Champagne made still wine for most of its existence, much of it pale red. Bubbles began as a fault: fermentation stalling in the cold and restarting in spring, in bottles that were not strong enough to contain it. Two things turned the fault into a product. Christopher Merret described deliberately adding sugar to provoke a second fermentation in a paper to the Royal Society in 1662, and English coal-fired glass furnaces were producing bottles that could survive six atmospheres of pressure. Dom Pérignon, working at Hautvillers in the same period, was a blender and a quality reformer rather than the inventor of the myth.
Method arrived slowly. Veuve Clicquot's cellar developed the riddling table in the 1810s to clear sediment without losing pressure, and in 1836 the pharmacist André François worked out how to calculate the sugar needed for a second fermentation, which stopped cellars losing a fifth of their stock to explosions.
The modern map was drawn by conflict. When phylloxera and cheap imported grapes collapsed prices, growers in the Marne rioted in 1911 against the inclusion of the Aube in the appellation, and cavalry were sent in. The boundaries were finally fixed in 1927, the AOC confirmed in 1936, and the CIVC established in 1941 to govern the relationship between growers and houses. The most recent shift is quieter: since the 1990s a generation of récoltants-manipulants have bottled their own fruit from single villages and single sites, which is why a knowledge base like this one now needs a grower field as well as a house field.
